Thanks to you, we like to think there’s not a single Idaho trail, river, or campground that hasn’t been visited by a cracked-open can of one of our beers or cocktails over the last fifteen years. This gem-state, full of wonder, opportunity, and exploration, is the reason we are here today. 

François Payette was a French Canadian trapper whose name is stamped all over Idaho, and for good reason. It's become synonymous with adventure, the outdoors, and the spirit of this place. The best river in Idaho shares the name. We figured we should, too.

Born, Brewed, Crafted and Canned in Idaho


It all started in 2009, when Mike left corporate life to get his Associate’s Degree in Brewing Technology. 

In 2010, he came home to Boise to start a production brewery, soon to offer a variety of beers on draft and in cans for the public. 

A year later in 2011, Payette Brewing opened with a 15-barrel brewing system, fermenters, and brite tanks full of beer, as well as a Tap Room featuring eight beers on tap.

In 2012, moving beyond draft beer, Payette became the first craft brewery in Idaho to can beer, with Mutton Buster Brown Ale and Payette Pale Ale. 

Payette was then awarded “Best Brewery” by the Boise Weekly and since then, has won that title consistently throughout the years.

In 2015, Payette broke ground on a new space to allow more room for brewing and a bigger home for local Boiseans to gather.

The new brewery opened in 2016, and became an epicenter of the Boise community and a popular gathering place for outdoor enthusiasts and beer lovers. 

In 2020, an 11,000 square-foot shaded grassy area known as the Beer Garden was added to the space featuring picnic tables, a fire pit, bocce ball court and yard games.

In 2022, the Payette drink lineup expanded to craft cocktails - in a can. Anytimers joined the portable drink game and were a hit from the start. 

And now, 15+ years after the start, Payette Brewing shifted their name to encompass all the new and innovative drinks they now offer in addition to their original lineup, as well as a new frame of mind of the industry: Payette Provisions.

The new name finally brings together something that’s been brewing for some time.

Payette Provisions isn’t just beer, it’s also canned cocktails, the Payette Forward mission, the community, and the overarching love of nature. It’s time to include everything under one larger umbrella and pay bigger homage to the great state of Idaho and everything important in the community.
